Pistachio Cinnamon Chicken Salad

Wake up your taste buds with the unique flavors of this creamy, dreamy chicken salad.

Serves 6 

Dietitian's Tip: 

Add some diced celery or apple for an extra crunch and boost in fiber. Serve on a slice of toasted whole wheat bread or over mixed greens with whole grain crackers to round out this DASH meal. 

Ingredients: 

16 ounces cooked boneless, skinless chicken breast
1 ½ cups fat-free plain Greek yogurt
½ cup pistachios, finely chopped
1 teaspoon ground cinnamon
1 teaspoon fresh lime juice
4 fresh basil leaves, finely chopped
¼ teaspoon ground pepper
2 scallions, finely chopped 

Preparation: 

Shred cooked chicken breast with a fork and place in a large mixing bowl.

Add the remaining ingredients and gently toss to combine. Served chilled or at room temperature.
