Panzanella Salad

Transform day-old whole grain bread into this colorful, fresh, and tasty salad. Try

Serves 8 

Dietitian's Tip: 

Mix it up by adding some grilled chicken breast or low-sodium garbanzo beans. Serve over a bed of mixed greens to make a great lunch or dinner. A glass of milk on the side rounds out this DASH friendly meal. 


8-10 medium ripe tomatoes, cut into 1 inch cubes
1 cup seedless cucumber, diced
½ red onion, chopped
8-10 basil leaves, chopped
1 tablespoon extra-virgin olive oil
Extra-virgin olive oil spray
6 ounces whole wheat French bread
¼ teaspoon salt
¼ teaspoon pepper


Lightly spray bread with olive oil and grill over medium heat until toasted and nicely browned. Remove from heat and cut into 1 inch cubes.

In a large bowl, combine tomatoes, cucumber, onion, basil, olive oil, salt, and pepper. Let the mixture sit for about 30 minutes so the flavors can combine.

Add the bread cubes and toss to combine. Serve immediately.
