Dietitian's Tip:

An easy and flavorful vinaigrette dressing is a staple for the DASH eating plan. Keep this in the refrigerator to use as a salad dressing, marinade for lean meats or vegetables, or to toss with cooked whole grains and fresh vegetables for a simple side dish. Shake well before using.

3/4 cup extra-virgin olive oil
3/4 cup balsamic vinegar
1 teaspoon sugar
1 clove garlic, finely minced
1/2 tsp dried oregano
2 tsp Dijon mustard
½ tsp salt
Fresh ground black pepper to taste

Combine all ingredients in a jar with a tight fitting lid and shake well. This vinaigrette may be stored in the refrigerator for up to 2 weeks.

Makes about 1 1/2 cups.
