Cilantro Chicken Salad

Instead of making a traditional sandwich, spoon this tasty salad into a hallowed out tomato, bell pepper, or avocado.

Serves 2 

Dietitian's Tip: 

Light mayonnaise is 50% lower in fat than regular. Try fat-free Greek yogurt instead for 0 grams of fat and 5 grams of protein.  


7 ounces cooked chicken breast, shredded or diced
2 tablespoons light mayonnaise
1 small scallion, chopped
2 teaspoons lime juice
2 tablespoons chopped cilantro
pinch of garlic powder
pinch of cumin
pinch of chili powder
1-2 tablespoons chicken broth 


Combine chicken, mayonnaise, scallions, lime juice, and cilantro.

Season to taste with pepper, garlic powder, cumin, and chili powder.

Add a little chicken broth if chicken seams to dry, 1 tablespoon at a time.
