Apple Yogurt Coleslaw
Are you bored with your usual vegetable side dishes? Try this coleslaw with a yogurt twist.
Recipe adapted from Healthy Eating Made Easier and the Dairy Council of California.
This recipe has a little bit of everything including protein, fiber, potassium and calcium making it the perfect side dish. Pair the Apple yogurt coleslaw with Cocoa Crusted Pork Tenderloin (see recipe) and brown rice for an amazing DASH meal.
4 cups green cabbage, thinly sliced
1 medium granny smith apple, unpeeled and chopped
½ cup carrot, shredded
1 cup plain low-fat yogurt
1 teaspoon sugar
1 Tablespoon lemon juice (fresh or bottled)
½ teaspoon celery seeds
¼ teaspoon salt
Pinch of pepper
Combine cabbage, apple and carrots in a medium bowl; toss well and set aside.
In a separate bowl, combine remaining ingredients to make the sauce; mix well.
Pour sauce over cabbage mixture and toss gently.
Cover and chill for 8 hours, serve with a slotted spoon.
Per serving: 100 calories, 1 g total fat, 0 g saturated fat, 19 g carbohydrate, 4 g protein, 4 g fiber, 220 mg sodium, 325 mg potassium, 5 mg magnesium, 160 mg calcium
