Apple Salad with Pistachios

Spice up your day with this crunchy fall salad; it will awaken your taste buds with contrasting flavors of slightly sweet apples, savory cheese, and spicy pepper.

Serves 4

Dietitian's Tip: 

Apples are a great source of dietary fiber.  Try mixing in other tart apples such as Pink Ladies, Winesap or Pippin for a more vibrant flavor and color (if you leave the peel on).  If blue cheese is not your thing try substituting Feta for a milder flavor.


1 cup plain lowfat or fat-free yogurt
3 Granny Smith apples peeled and cubed
1/3 cup pistachios
1/3 cup blue cheese crumbles
Squeeze of lemon juice
1/4 tsp cayenne pepper
1/2 tsp black pepper


Mix yogurt and pepper together in a bowl.

Squeeze the lemon juice onto the cubed apples and toss them into the yogurt mixture.

Let chill in the refrigerator for an hour.

When ready to serve, add blue cheese and pistachios to apple mixture and mix well.

Serve immediately.
